The search for a healthy and nutritious diet has intensified the consumption of frozen fruit pulps by a large part of the population in the state of Maranhão. The book deals with microbiological and chemical analyses carried out on fruit pulps sold at street markets in the city of São Luís-MA. The high counts of molds and yeasts detected are worrying from the point of view of food safety. The fruit pulps used in this study have varying amounts of macronutrients, generally showing high carbohydrate content and low ash, fiber, protein and lipid content.

La recherche d'une alimentation saine et nutritive a intensifié la consommation de pulpes de fruits congelées par une grande partie de la population de l'État de Maranhão. Le livre traite des analyses microbiologiques et chimiques effectuées sur les pulpes de fruits vendues sur les marchés en plein air de la ville de São Luís-MA. Les taux élevés de moisissures et de levures détectés sont inquiétants du point de vue de la sécurité alimentaire. Les pulpes de fruits utilisées dans cette étude présentent des quantités variables de macronutriments, avec généralement une teneur élevée en glucides et une faible teneur en cendres, en fibres, en protéines et en lipides.

Das Buch befasst sich mit mikrobiologischen und chemischen Analysen von Fruchtfleisch, das auf den Straßenmärkten der Stadt São Luís-MA verkauft wird.
